SEED OIL SCOUT VERFIED
Family-Owned & Operated
Arapahoe · Jefferson · Douglas Co.
Some pizza places open for business. We opened to keep a promise.
Capitol Pizza has roots that go back to downtown Denver. A family-owned pizzeria that sat just behind the Colorado State Capitol and became a neighborhood institution for the people who worked and lived nearby.
We live here, and our kids go to school here. We drive through Downtown Littleton, grab coffee near Sterne Park, and catch our kids' games in neighborhoods like Cornerstone Park, Woodlawn, and Berry Knoll. When families in Southpark, Northridge/Westridge, Sterling Ranch, Bow Mar, Grant Ranch, Southglenn, and the surrounding neighborhoods are looking for a great pizza night, we want them to think of us, not because we're the closest option, but because we've earned it!
That's a standard we hold ourselves to every single day. We've kept everything that made Capitol Pizza worth preserving, and we've made real improvements. Better ingredients, cleaner options, gluten-free that doesn't feel like an afterthought. All because we believe a great family-owned pizza restaurant should be something you feel good about serving your family, not just something convenient.
"When the opportunity came to take over Capitol Pizza's Littleton location, it didn't feel like a business decision. It felt like the right thing to do."
- Laura & Jeff, Owners

We're Laura and Jeff. Arapahoe County locals, parents, and the owners of Capitol Pizza Littleton, a family-owned pizzeria rooted in the community we've called home for over three decades. Between the two of us, we're raising four kids, staying busy with school nights and sports schedules, and doing our best to make sure dinner is something the whole family actually looks forward to. When the opportunity came to take over Capitol Pizza's Littleton location in February 2026, it didn't feel like a business decision. It felt like the right thing to do.
Capitol Pizza Standards
Every pizza we make has to answer one question. Would we serve this to our own kids?
That's it. That's the standard. It sounds simple, but it changes everything about how we run this kitchen. We have four children. We know what a Tuesday night looks like. Practice ran late, everyone's hungry, and dinner needs to happen now. We want to be the place your family lands on without thinking twice. The habit that never lets you down.
INGREDIENTS WE TRUST
We use what we'd put in front of our own family. Nothing goes in the recipe that we can't stand behind. And if we can’t pronounce it we don’t use it.
OPTIONS THAT FIT REAL LIFE
Gluten-free and vegan options that are actually made with quality ingredients, made with the same standard as all the others. Choices that work for athletes, families, and busy weeknights alike.
CONSISTENT, EVERY TIME
Your Thursday order should be as good as your Saturday one. Same standard. No shortcuts, even when it gets busy.
We think about the families who might be ordering for someone with dietary restrictions. Gluten-free shouldn't be an afterthought on the menu, and it isn't here. Arapahoe, Jefferson and Douglas County athletes who want something satisfying without second-guessing it. Parents feeding a table of five after a long week that just want dinner to be easy and good. We built our standards around those people, because those people are us.Being the best pizza in Littleton isn't a title we put on ourselves. It's something we earn with every order because that's what it means to run a family-owned pizzeria the right way.
We'll tell you exactly what's in your food. Because we're proud of it.
No fillers, no additives, no dyes. Just real ingredients used the traditional way. Anybody can claim quality. We can prove it.
VERIFIED SEED OIL FREE
Via Seed Oil Scout · Independent Verification
Anybody can say they use quality ingredients. We wanted to be able to prove it. That's why we pursued verification through Seed Oil Scout, an independent platform used by over a million health-conscious diners to find restaurants they can actually trust. Getting verified isn't just filling out a form. You share your menu, you share your ingredients, and you demonstrate that what you're cooking meets a real standard. We did that, and are proud to say we earned that for our community.
For our customers in Littleton, that means something specific: when you order from us, you're not eating food cooked in the industrial seed oils (canola, soybean, sunflower) that fill most restaurant kitchens because they're cheap and convenient. We made a different choice, and the Seed Oil Scout verification is third-party proof that we follow through on it every single day, not just when it's easy.
WHAT SEED OIL SCOUT VERIFICATION MEANS FOR YOU
Seed Oil Scout is an independent app with 1M+ downloads used by health-conscious diners to find restaurants that cook without industrial seed oils. Capitol Pizza Littleton has been reviewed and verified. Meaning our ingredients and cooking oils have been confirmed to meet their standards for clean, transparent cooking. You can find us in the app, or just order knowing someone has already checked.
LOCAL SOURCING
The Flour Behind the Crust
Great pizza starts long before it hits the oven. It starts with the flour. That's why we use Ardent Mills, North America's premier flour-milling company, headquartered right here in Denver and trusted by serious pizza makers who refuse to cut corners. Their pizza flour is carefully milled to deliver the right amount of protein every time, producing a crust that's crispy, chewy, and built to hold up under real toppings. When you pick up a Capitol Pizza slice, you're tasting an ingredient chosen on purpose.
COLORADO MADE
Gluten-Free Crust, Locally Sourced
We were picky about this one. A lot of gluten-free crusts do the job and nothing more — you eat them because you have to, not because you want to. Ours is locally sourced right here in Colorado from Sweet Escape Pastries. One that customers say is actually worth ordering, not just tolerating.
"Easy doesn't have to mean unhealthy. We believe dinner should be simple and something you feel good about serving. Whether you're feeding an athlete, a picky kid, or someone who's just finally found a pizza place that thought about them."
You know what's in it.
Now come taste it.
Takeout and delivery from a family-owned pizzeria that actually cares about what they're serving you. Littleton, Colorado.
